Soba noodle

Komatsuya is a Soba (buckwheat noodle) shop, located on Ochiai Street in the center of Shima Onsen, next to another Soba shop, Nakajimaya.

The current owner is the sixth generation, and is an old-established business that has been going on since the end of the Edo period (1603 to 1868). He returned to Shima Onsen after training at famous restaurants everywhere.

He has been studying Soba every day, milling buckwheat seeds from the local Nakanojo region on his own in a stone mortar at the back of the shop.

The “Maitake (mushroom) Soba Gozen” is recommended because soba noodles go well with tempura.

The color of Soba is often associated with gray, “Sarashina Soba,” which uses the pure white color of the core part of Soba to make it more luxurious, is also recommended. (Limited quantity)
